Preparation time: 15 minutes Cooking time: 15 minutes 2 boneless, skinless chicken b.r.e.a.s.t.s (10 ounces total), split and pounded to -inch thickness 1 tablespoon low sodium soy sauce 1 tablespoon cornstarch SEASONING SAUCE.
2 tablespoons low sodium soy sauce 1 tablespoon dry sherry 1 tablespoon rice wine vinegar 1 teaspoon sugar 1 teaspoon sesame oil 1 tablespoon peanut oil 4 medium dried red cayenne peppers green bell pepper, julienned 1 stalk celery, thinly sliced on the diagonal cup roasted peanuts 1 scallion, green and white parts, chopped Cut the chicken into bite-size pieces and place in a gla.s.s bowl. In a small bowl, mix the soy sauce and cornstarch into a smooth paste and combine with the chicken. Stir to coat all the pieces, then cover and set aside for 10 minutes.
Whisk all the ingredients for the seasoning sauce in a small bowl and set aside.
Preheat a wok or large skillet, then add the oil. Stir-fry the dried red peppers until blackened, about 1 minute. Add the chicken pieces and stir-fry until the chicken begins to brown, about 2 minutes. Add the green pepper and celery and stir-fry until crunchy, no more than 2 minutes.

Add the chicken b.r.e.a.s.t.s and onions and set the mixture aside to marinate, covered or sealed, about 10 minutes.
Heat a large skillet over medium-high heat for 1 minute. Add the remaining tablespoon of peanut oil. Lift the chicken from the marinade and pat dry, reserving the marinade and onions. Place the b.r.e.a.s.t.s in the hot skillet, smooth side down. Cook about 7 minutes, then turn and cook for 3 more minutes on the second side. Add the reserved marinade and onions to the pan. The gin and orange juice mixture will steam through the seared meat. Cook, turning the chicken once or twice more, until the onions are brown, heaping them atop the chicken as they begin to color. By this point the chicken will be cooked through and the sauce nearly evaporated. (Cut into the thickest part of the chicken to check: it should be opaque white.) Cut the chicken thighs into 1-inch-wide strips. Coat them with the dry rub, reserving any remaining mixture.
Heat a large skillet over very high heat. Add the oil and preheat. Cook the chicken strips, turning them with tongs, until cooked through and golden on the outside, about 5 minutes. Transfer to a warm plate.
Add the onion slices to the hot pan and cook until they begin to brown, about 6 minutes. Add the garlic and cook a few minutes more. Add the tomato and cook, stirring a moment longer. Add the spinach in handfuls, stirring until it begins to wilt before adding another batch. Once all the spinach is in the skillet, sprinkle it with the reserved dry rub, stir, then cover and cook 2 to 3 minutes longer.
Stir in the grated ginger and half of the coconut milk. Taste and adjust the seasonings with salt and pepper. Transfer to a food processor or blender and puree until smooth. Remove the blade and stir in the cheese squares, cover, and set the mixture aside.

That's a good idea, because the salad makes enough to feed four-it keeps well in the refrigerator and makes a great "free lunch" the next day. You can double the spice blend and cook four pieces of meat at one time, saving two for lunch. Shred all the salad ingredients in the food processor using the slicing blade, and you'll have the work done in no time.

Should you have some chicken left over, make an impromptu nicoise-style salad the next day, tossing cooked chicken with nicoise olives, hard-cooked eggs, lettuce, and wedges of terrific tomatoes. Finish with drops of extra-virgin olive oil and lemon juice.

Sweet Chicken Sausage Tagine The Moroccan tagine, rich and colorful, is named for the pot in which its cooked. You can successfully duplicate this dish by cooking it in a porcelain-clad cast-iron baker (such as Le Creuset) or another large heavy stewpan. The blend of fresh vegetables with crunchy almonds, sweet raisins, and sausage makes for a satisfying dinner. Prep the vegetables while you brown the sausages. For those who aren't counting carbs, serve this stew over a bed of couscous. Half a cup of couscous yields 100 calories and 20 carbohydrate grams.

Picture bright greens nestled under crisp, golden chicken thighs and bathed in a rosy sauce that will make you salute. It's a dinner that combines all those great flavor notes: sweet-and-sour sauce over rich chicken and lovely, bitter greens.
MAKES 2 SERVINGS.
Preparation time: 15 minutes Cooking time: 25 minutes 2 boneless, skinless chicken thighs (10 ounces total) teaspoon kosher salt teaspoon freshly milled black pepper 1 tablespoon unsalted b.u.t.ter 2 garlic cloves, sliced 1 tablespoon finely chopped fresh chives plus additional for garnish 2 tablespoons minced fresh flat-leaf parsley plus additional for garnish cup red wine vinegar cup low-sodium chicken broth 1 teaspoon tomato paste 2 tablespoons heavy cream 4 cups collard (or other) greens, washed, stemmed, and torn into bite-size pieces Dry the chicken pieces, then rub with salt and pepper. Heat the b.u.t.ter in a large skillet over medium heat and add the chicken, smooth side down. Brown to a golden color on all sides, about 10 minutes, turning as needed. Meanwhile, drop greens into hot fat in the saucepan and cook a few moments, then splash in a little sauce from the skillet. Cover and steam a few moments, until the greens are limp but still bright green.
To serve, arrange greens and chicken pieces on a warm dinner plate and slather with rosy, hot sauce. Sprinkle more chives and parsley on top.

Preparation time: 10 minutes Cooking time: 25 minutes 2 chicken b.r.e.a.s.t.s (10 ounces total), split and pounded to -inch thickness 1 tablespoon olive oil 2 tablespoons freshly grated Parmigiano-Reggiano cheese teaspoon dried oregano teaspoon kosher salt teaspoon cayenne cup low-sodium chicken broth 4 cups broccoli rabe 2 garlic cloves, chopped Fill a 5-quart pot with water and bring to a boil. Preheat the oven to 450F. Place the chicken in a gla.s.s baking dish. Brush both sides with half of the olive oil. In a small bowl, stir together the cheese, oregano, salt, and pepper. Sprinkle over the chicken. Add half the chicken broth, then place in the oven and roast until the chicken is cooked through, about 25 minutes.
When the water comes to a boil, blanch the broccoli rabe pieces for 2 to 3 minutes. This reduces the bitterness. Drain well. Meanwhile, preheat a large skillet over medium-high heat, then film the bottom with the remaining oil. Add the garlic, the blanched broccoli rabe, and the remaining broth, cover, and steam until tender, 5 to 8 minutes.
